making pemmican





Making pemmican has gone out of fashion but should be revisited.  It was used as a natural survival food and allowed large kills to be processed and not lost.  We are so used to using fresh, frozen or smoked that we forget the advantages of pemmican.

Rather obviously it outlasts all other methods of preservation and is controlled by rancidity and that is fixed by airtight containers.

Better yet it is already prepped for making curries and stews.  This is a reminder of cooking methods used by hunting bands.  That rabbit was tossed in as an extra into the daily stew pot which surely used pemmican.
