This is seriously interesting. The experiment uses a couple of conductive plates that would certainly work to leave the potatoes unfit to eat, but it is likely possible to use other types of plates. One should likely be graphite in any case.
There is enough produced energy to be truly useful and allows surplus electronics to trickle down into places one would least expect them. It starts of been a great way to recharge that cell phone.
There are other uses for spent cooked potatoes such as mash for producing alcohol. My point is that it is unlikely that waste potato starch will go unused if it is been produced daily.
The fact is that potatoes are presently under produced in favor of more palatable alternatives. Yet it is simplicity for a subsistence farmer to produce and store a ton of product. It simply demands a little more labor which limits any desire to produce a spare ton or so. This could quickly change all that.
The surplus cooked potatoes should make excellent pig feed.

More than 1.6 billion people in the world have little or no access to electricity and most have no way of accessing modern electrical technology, such as like electric lighting, mobile phones or televisions.
But scientists at an Israeli university say they have made a remarkable discovery in relation to the potato which may bring electricity to millions of the world's poor.
