Do look at this video.   It is quite impressive.  There are still plenty of additional things that can be done here, not least planting a food forest on the additional land that he has.

What is driving this is the rise of juvenile greens as a choice consumer product.   It is premium priced and it also lasts a long time in the fridge.  It is also expanding into many other plants as well.

The big take home is that one person can operate something like this as a full time enterprise and make some sort of a viable living.  Better yet the land becomes hyper attractive to the neighbors.

The key secret here is using no till to support weed control.  turning up soil turns up the soil weed seed store. Bad idea..   .
